Valentine’s Confetti Vanilla Sandwich Cookies

Whether you’re baking a treat for your child's Valentine’s celebration, whipping something up to surprise that special someone, or just wanting to make yourself a cute dessert, our Valentine’s Sandwich Cookies are the perfect treat. Add a bit of love to this season, no matter who you choose to share it with!
The simplest and sweetest solution to the Valentine’s season, all you need is your choice of Crave Cookie Dough, your choice of Crave Buttercream, and a Valentine’s sprinkle mix. We’ve done most of the work, so all you have to do is pop the cookie dough in the oven, sandwich the buttercream between the cookies, and roll through your favourite sprinkle mix. Seriously, that’s it! Whipped up in under 30 minutes, you can’t go wrong with this delicious Valentine’s treat - because who can say no to sprinkles?
Ingredients:
- Crave Cookie Dough (your choice of flavour - we used Confetti Cookie Dough for this recipe)
- Crave Buttercream (your choice of flavour - we used Vanilla Buttercream for this recipe)
- Valentine’s sprinkle mix
Tools:
- Cookie sheet
- Parchment paper
- Cooling Rack
- Medium bowl
- Stand mixer or mixing spoon
- Spreading knife
Directions:
- Preheat the oven to 350°F (170°C). Line a baking sheet with parchment paper.
- Remove buttercream from the freezer and allow it to come to room temperature.
- Place frozen cookie dough on a baking sheet about 2” apart.
- Bake for 10-15 minutes until golden brown.
- Remove from the oven and set aside to cool for 5 minutes. Transfer to a wire rack to cool completely.
- While the cookies are cooling, scoop the buttercream into a large bowl and beat with an electric mixer or hand mix for 5 minutes, or until it is light and fluffy.
- Once the cookies have cooled, scoop your desired amount of buttercream between two cookies. Place them together with the buttercream towards the middle, squishing until the buttercream is just over the edge of the cookie.
- Roll the edge of the sandwich cookie through the sprinkles.
